Apparently I’ve been on a breakfast kick lately. I mean it’s great, because I usually eat the same thing every morning, and that thing is- cereal. So easy. So yummy. So easy. But when I was given a chance to take cereal and “reimagine” it, I thought, THIS is what I need! I always have cereal on hand, so what can I do to switch it up?

There are a million and a half yogurt parfait recipes out there, so I wanted to give you something a little unique, but still super easy! Here it is… yogurt and cereal parfait with fruit jelly. You know what’s even more fun? You can make this with your kids, because it’s just that easy.

Ever since I was a child, I’ve loved all things jello-y. I wanted to incorporate this into my parfaits, but still keep it breakfast friendly. The jelly I used here is SUPER easy and super guilt free! At least, guilt free if you are cool with 100% fruit juice. Which, come on… It’s fruit juice.

So let me tell you the easy steps to make this yogurt and cereal parfait.

Step one.

Take a cup of cold juice, and get two bowls. Put about 1/4 cup in one bowl and the rest in the other. Sprinkle 1/2 tablespoon of gelatin over the 1/4 cup of juice, and let it bloom. Wait a couple of minutes. Microwave the other bowl until just boiling, and pour into the gelatin juice. Mix, pour into a mold, and refrigerate for a few hours or overnight. Woohoo! Fruit jelly is done! Just use a fork to break it up. I made three different flavors, but you can make a double batch of one, or two flavors, or whatever you want, really.

Step two?

Layer some plain greek yogurt, jelly, and cereal in a cup. Bonus points if you use a clear cup, because then you get to see the pretty layers. I used Kellogg’s Rice Krispies (18 oz) and Frosted Flakes (19 oz), which, by the way, are on sale at Target right now for $2.99. You’re welcome.
