Ingredients

  • 1 cup water
  • 1 cup sugar
  • 4 sprigs fresh rosemary about 4-6 inches long
  • 4 cups sparkling water (club soda)
  • 1/2 cup fresh squeezed lemon juice
  • 1/2 cup heavy cream
  • ice cubes

Instructions

  1. To make the rosemary simple syrup: In a small saucepan, combine water and sugar, and stir over medium high heat until sugar has melted. When the sugar-water comes to a simmer, add the rosemary springs and allow to simmer for about a minute. Remove from heat and let steep for about thirty minutes.

  2. Tip: You may want to make these in individual glasses, so you can adjust the sweetness/tartness/creaminess to your liking. The amounts above are a guideline and you should adjust it to taste.

In a cup, add ice, 1 cup of sparkling water, 1/4 cup of rosemary syrup, 2T of lemon juice, and 2T cream. Stir to combine, and drink!
